The restaurant offers an excellent choice of cuisine for guests, the finest local ingredients being at the core of all dishes.  Seafood including lobsters and mussels fresh every day in Killary fjord and organic lamb and beef sourced from the farms which surround the resort.

-          Comprehensive waste reduction program, sorting waste and recycling wherever possible.

-          On site water treatment plant, that ensures all effluent leaves the resort in the same condition in which it came in. 

-          The resort uses of two medium sized wood chip boilers and solar panels for water preheating. 

-          All other electricity comes from Air-Tricity. The complex is situated in 300 acres of mature forest that is ready for harvesting; this will be slowly thinned and chipped to provide the wood chips for the sites boilers, the harvesting is coupled with a replanting program. 

-          Heat exchangers have been installed in the accommodation wing to further increase efficiencies, and pipes comprehensively insulated to

-          For the new wing sustainable building methods have been used where ever possible, including recycled copper for the roof, recycled newspaper for insulation in the attics and all wood came from certified managed sustainable forests.

-          All bulbs are either low voltage or long life. 

-          All new rooms are fitted with energy saving cards that ensure that there is no wastage of energy when the units are occupied.

-          In autumn 2008 Delphi Mountain Resort introduced an environmental awareness syllabus for all of the school and youth groups that visit Delphi. This was developed in line with the SEI and DOE materials.

-          In terms of activities the Delphi Mountain Resort is committed to activities that are sustainable in environmental terms- in other words things that will have little or no impact on the environment - kayaking, walking, surfing, biking, using the local landscape with only low impact programs.
